Zucchini Garlic Bites

Ingredients:

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1/2 cup breadcrumbs (or almond flour for a gluten-free option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 1/4 cup olive oil (for frying)
  • Fresh parsley, chopped (for garnish)
  • Marinara sauce or ranch dressing (for dipping)

Directions:

  1. Preheat your oven to 400°F (200°C) if baking. Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese (if using), minced garlic, dried oregano, salt, and pepper. Mix well.
  3. In another bowl, beat the eggs.
  4. Dip each zucchini slice first into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
  5. For frying: In a large skillet, heat the olive oil over medium heat. Add the coated zucchini slices in a single layer, cooking for about 2-3 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil.
  6. For baking: Arrange the coated zucchini slices on the prepared baking sheet and drizzle lightly with olive oil. Bake for about 20-25 minutes, flipping halfway through, until golden and crispy.
  7. Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
