Ingredients:
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1/2 cup breadcrumbs (or almond flour for a gluten-free option)
- 1/4 cup grated Parmesan cheese (optional)
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs, beaten
- 1/4 cup olive oil (for frying)
- Fresh parsley, chopped (for garnish)
- Marinara sauce or ranch dressing (for dipping)
Directions:
- Preheat your oven to 400°F (200°C) if baking. Line a baking sheet with parchment paper or lightly grease it.
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese (if using), minced garlic, dried oregano, salt, and pepper. Mix well.
- In another bowl, beat the eggs.
- Dip each zucchini slice first into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
- For frying: In a large skillet, heat the olive oil over medium heat. Add the coated zucchini slices in a single layer, cooking for about 2-3 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil.
- For baking: Arrange the coated zucchini slices on the prepared baking sheet and drizzle lightly with olive oil. Bake for about 20-25 minutes, flipping halfway through, until golden and crispy.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
- Serve warm with marinara sauce or ranch dressing for dipping. Enjoy your Zucchini Garlic Bites!
