  2. Ingredients:
  • 1 1/2 pounds ground beef
  • 1 packet taco seasoning
  • 1 cup crushed tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 small onion, diced
  • 1 egg, beaten
  • 1/4 cup milk
  • 1/2 cup sour cream (for topping)
  • 1/2 cup sliced jalapeños (optional)

For the Topping:

  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, taco seasoning, crushed tortilla chips, shredded cheddar cheese, salsa, chopped cilantro, diced onion, egg, and milk. Mix until fully combined.
  3. Press the meat mixture into a greased loaf pan, shaping it into a loaf.
  4. Spread the remaining 1/2 cup of salsa over the top of the meatloaf, then sprinkle with 1/2 cup shredded cheddar cheese.
  5. Bake for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F).
  6. Let the meatloaf rest for 5-10 minutes before slicing. Top with sour cream and sliced jalapeños if desired.
