- Zesty Mexican Taco Meatloaf
- Ingredients:
- 1 1/2 pounds ground beef
- 1 packet taco seasoning
- 1 cup crushed tortilla chips
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1 small onion, diced
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup sour cream (for topping)
- 1/2 cup sliced jalapeños (optional)
For the Topping:
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
Directions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, taco seasoning, crushed tortilla chips, shredded cheddar cheese, salsa, chopped cilantro, diced onion, egg, and milk. Mix until fully combined.
- Press the meat mixture into a greased loaf pan, shaping it into a loaf.
- Spread the remaining 1/2 cup of salsa over the top of the meatloaf, then sprinkle with 1/2 cup shredded cheddar cheese.
- Bake for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F).
- Let the meatloaf rest for 5-10 minutes before slicing. Top with sour cream and sliced jalapeños if desired.
