Zesty Lemon Chicken Piccata

Chicken Piccata is a classic Italian dish that balances vibrant, zesty flavors with a silky, savory sauce. The combination of lemon, capers, and white wine creates a tangy yet rich sauce that perfectly complements the tender, golden-brown chicken. The quick cooking method ensures that this dish is as flavorful as it is fast, making it an ideal choice for a weeknight dinner or a special occasion.

  1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour (for dredging)
  • Salt and pepper, to taste
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 1/2 cup dry white wine (or chicken broth)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup capers, drained and rinsed
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish, optional)

Directions:

  1. Begin by preparing the chicken breasts: If they are thick, cut them in half horizontally to create thinner cutlets, or use a meat mallet to pound them to an even thickness. Season both sides of the chicken breasts with salt and pepper.
  2. Dredge each chicken breast in flour, shaking off any excess.
  3. Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the butter is melted and the oil is hot, add the chicken breasts to the pan. Cook for 3-4 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the pan and set aside on a plate.
  4. In the same skillet, add the white wine (or chicken broth), scraping up any browned bits from the bottom of the pan. Let the liquid simmer for 1-2 minutes to reduce slightly.
  5. Add the lemon juice and capers to the skillet, stirring to combine. Simmer for another 2-3 minutes, until the sauce is slightly reduced and flavorful.
  6. Return the chicken breasts to the pan and spoon the sauce over the top. Let the chicken cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Remove from heat and swirl in the remaining tablespoon of butter to create a silky sauce.
  8. Garnish with fresh parsley and lemon slices, and serve immediately.
