Zesty and Cheesy Crockpot Taco Spaghetti

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chiles (10 oz)
  • 1 can tomato sauce (8 oz)
  • 1 cup beef broth
  • 8 oz spaghetti, broken in half
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste

Directions:

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the taco seasoning mix to the beef, stirring well to combine.
  3. Transfer the seasoned beef to the crockpot. Add the diced tomatoes with green chiles, tomato sauce, and beef broth. Stir well.
  4. Cover and cook on low for 3-4 hours.
  5. After 3 hours, add the spaghetti, stirring to ensure it’s submerged in the sauce. Cover and cook for an additional 30-40 minutes, until the spaghetti is tender.
  6. Once the spaghetti is cooked, sprinkle cheddar and mozzarella cheese on top. Cover and let cook for an additional 10 minutes, or until the cheese melts.
  7. Serve warm, garnished with fresh cilantro, and season with salt and pepper to taste.
