- Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 cups shredded Mexican cheese blend
- 1 bag of tortilla chips, slightly crushed
- 1 cup diced tomatoes
- ½ cup chopped green onions
- ½ cup sour cream (for garnish)
- Fresh cilantro, chopped (optional, for garnish)
Directions:- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a large skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
- Add taco seasoning and salsa to the skillet, stirring to combine with the beef. Let simmer for 2-3 minutes.
- Add black beans and corn to the skillet, stirring until heated through. Remove from heat.
- Layer half of the crushed tortilla chips in the bottom of the prepared baking dish. Spread the beef mixture evenly on top.
- Sprinkle half of the shredded cheese over the beef mixture, then layer the remaining tortilla chips and cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes, green onions, and cilantro. Serve warm with a dollop of sour cream.
