Walking Taco Casserole with Crunchy Toppings

  1. Ingredients:
    • 1 lb ground beef
    • 1 packet taco seasoning mix
    • 1 cup salsa
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 cup corn kernels (fresh, frozen, or canned)
    • 2 cups shredded Mexican cheese blend
    • 1 bag of tortilla chips, slightly crushed
    • 1 cup diced tomatoes
    • ½ cup chopped green onions
    • ½ cup sour cream (for garnish)
    • Fresh cilantro, chopped (optional, for garnish)
    Directions:
    1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
    2. In a large skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
    3. Add taco seasoning and salsa to the skillet, stirring to combine with the beef. Let simmer for 2-3 minutes.
    4. Add black beans and corn to the skillet, stirring until heated through. Remove from heat.
    5. Layer half of the crushed tortilla chips in the bottom of the prepared baking dish. Spread the beef mixture evenly on top.
    6. Sprinkle half of the shredded cheese over the beef mixture, then layer the remaining tortilla chips and cheese on top.
    7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
    8. Remove from oven and top with diced tomatoes, green onions, and cilantro. Serve warm with a dollop of sour cream.
