Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 2 cups shredded cheddar cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups crushed tortilla chips (or Fritos)
- 1/2 cup salsa
- 1/4 cup sour cream (optional)
- Chopped lettuce, tomatoes, jalapeños, and cilantro for garnish
Directions:
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir and simmer for 5 minutes until the mixture thickens.
- Spread the beef mixture evenly in the baking dish. Layer the black beans, corn, and half of the shredded cheese over the meat.
- Sprinkle crushed tortilla chips on top, followed by the remaining cheese.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Let it cool slightly, then top with salsa, sour cream, and fresh veggies. Serve warm!
