Tuscan Style Creamy Chicken Pasta

Tuscan Chicken Pasta is the kind of dish that feels like a warm hug—creamy, comforting, and bursting with flavor. The sun-dried tomatoes bring a deep, tangy richness to the sauce, while the fresh spinach adds a pop of color and vibrancy.   1. Ingredients:
    For the Pasta:
    • 12 oz pasta (penne, fettuccine, or your favorite type)
    • 2 tablespoons olive oil
    • 2 chicken breasts, boneless and skinless
    • Salt and pepper, to taste
    • 3 cloves garlic, minced
    • 1/2 cup sun-dried tomatoes, chopped
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon red pepper flakes (optional)
    • 1 cup chicken broth
    • 1 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 2 cups fresh spinach
    • Fresh basil or parsley for garnish (optional)
    Directions:
    1. Cook pasta according to package instructions. Drain and set aside.
    2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
    3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
    4. Add the sun-dried tomatoes, basil, oregano, and red pepper flakes (if using). Stir to combine and cook for 2 minutes.
    5. Pour in the chicken broth and bring to a simmer. Let it cook for 3-4 minutes to reduce slightly.
    6. Lower the heat and stir in the heavy cream and grated Parmesan cheese. Simmer for another 3-5 minutes, until the sauce is thickened.
    7. Slice the cooked chicken into strips and return it to the skillet. Add the cooked pasta and spinach, tossing everything together until the spinach is wilted and the pasta is coated in the creamy sauce.
    8. Taste and adjust seasoning with salt and pepper if needed.
    9. Serve the pasta in bowls, garnished with fresh basil or parsley, and extra Parmesan if desired.
