1 small onion, finely diced
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 lb ground chicken
2 tablespoons Tamari (low-sodium) or soy sauce
2 tablespoons Thai sweet red chili sauce
1 tablespoon lime juice
1 tablespoon maple syrup, honey, or agave
1/4 cup chopped cashews
2 scallions (green onions), sliced
1/4 cup fresh cilantro, chopped
1/2 cup shredded carrots
For Serving:
Butter lettuce (or any large leaf lettuce, like romaine)
Sesame seeds (optional, for topping)

Instructions:
Cook the Chicken:
Heat sesame oil in a large skillet over medium heat. Add the diced onion, and sauté until soft, about 3-4 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
Add the Chicken:
Add the ground chicken to the skillet and cook, breaking it up with a spoon, until fully browned and cooked through, about 5-7 minutes.
