Texas Cowboy Stew

  1. Ingredients:
  • 1 lb ground beef
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, diced
  • 2 cans (15 oz each) ranch-style beans, undrained
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) corn, drained
  • 4 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste

Directions:

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the sliced smoked sausage to the pot and cook for 2-3 minutes until slightly browned.
  3. Stir in the onions and garlic, cooking for another 3-4 minutes until the onions are soft.
  4. Add the diced potatoes, beans, tomatoes, and corn. Mix well.
  5. Pour in the beef broth and season with chili powder, cumin, salt, and pepper.
  6. Bring the stew to a boil, then reduce heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally, until the potatoes are tender.
  7. Serve hot with cornbread or warm tortillas on the side.
