- Ingredients:
- 1 lb ground beef
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, diced
- 2 cans (15 oz each) ranch-style beans, undrained
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) corn, drained
- 4 cups beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
Directions:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the sliced smoked sausage to the pot and cook for 2-3 minutes until slightly browned.
- Stir in the onions and garlic, cooking for another 3-4 minutes until the onions are soft.
- Add the diced potatoes, beans, tomatoes, and corn. Mix well.
- Pour in the beef broth and season with chili powder, cumin, salt, and pepper.
- Bring the stew to a boil, then reduce heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally, until the potatoes are tender.
- Serve hot with cornbread or warm tortillas on the side.
