- Ingredients:
- 4 cups frozen tater tots
- 1 lb breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 4 eggs (fried or scrambled)
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, sliced (for garnish)
- Hot sauce (optional)
Directions:
- Bake the tater tots according to the package instructions until golden brown and crispy.
- In a skillet over medium heat, cook the sausage until browned, breaking it up into crumbles.
- Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually whisk in the milk, stirring constantly to prevent lumps. Simmer for 3-5 minutes until the gravy thickens. Add garlic powder, salt, and pepper to taste.
- While the gravy simmers, cook the eggs to your preference (fried or scrambled).
- Assemble the bowls: divide the crispy tater tots among bowls, top with sausage gravy, eggs, shredded cheddar, and sliced green onions. Add hot sauce if desired.
- Serve hot and enjoy!
