    • 1 pound breakfast sausage
    • 1/4 cup all-purpose flour
    • 2 cups milk
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and pepper to taste
    • Optional: pinch of red pepper flakes (for heat)
  • For Toppings:
    • 4 large eggs (fried or scrambled)
    • 1 cup shredded cheese (cheddar or your choice)
    • Sliced green onions or chives (for garnish)
    • Hot sauce (optional)

Directions:

  1. Preheat the oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake according to package instructions until golden and crispy, about 25-30 minutes. If desired, drizzle with olive oil and season with salt and pepper before baking.
  2. While the tater tots are baking, prepare the sausage gravy. In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula, until browned and cooked through. Drain excess fat if necessary.
  3. Sprinkle the flour over the cooked sausage and stir for about 1 minute until the flour is well incorporated. Gradually add the milk, stirring constantly to prevent lumps.
