- Tater Tot Breakfast Bowl with Sausage Gravy
Ingredients:
- For the Tater Tot Base:
- 1 (32 oz) bag frozen tater tots
- 1 tablespoon olive oil (optional)
- Salt and pepper to taste
- For the Sausage Gravy:
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional: pinch of red pepper flakes (for heat)
- For Toppings:
- 4 large eggs (fried or scrambled)
- 1 cup shredded cheese (cheddar or your choice)
- Sliced green onions or chives (for garnish)
- Hot sauce (optional)
Directions:
- Preheat the oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake according to package instructions until golden and crispy, about 25-30 minutes. If desired, drizzle with olive oil and season with salt and pepper before baking.
- While the tater tots are baking, prepare the sausage gravy. In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula, until browned and cooked through. Drain excess fat if necessary.
- Sprinkle the flour over the cooked sausage and stir for about 1 minute until the flour is well incorporated. Gradually add the milk, stirring constantly to prevent lumps.
- Continue to cook the gravy, stirring frequently, until it thickens, about 5-7 minutes. Season with garlic powder, onion powder, salt, pepper, and red pepper flakes (if using).
- Once the tater tots are crispy, remove them from the oven and place them in serving bowls.
- Pour the sausage gravy generously over the tater tots. Top with fried or scrambled eggs, shredded cheese, and garnish with sliced green onions or chives.
- Serve immediately with hot sauce on the side if desired.
