Taco-Style Cheesy Hashbrown Casserole

This Cheesy Taco Hashbrown Casserole is the ultimate comfort food, combining the flavors of taco night with the heartiness of a potato casserole. The golden hashbrowns provide the perfect base, while the seasoned ground beef, creamy soup, and melty cheeses bring it all together into a dish that’s both filling and flavorful.

  1. Ingredients:
    • 1 pound ground beef (or ground turkey)
    • 1 packet taco seasoning mix
    • 1 can (10.5 oz) cream of chicken soup
    • 1/2 cup sour cream
    • 1 cup shredded cheddar cheese
    • 1 cup shredded Monterey Jack cheese
    • 1 bag (30 oz) frozen hashbrowns, thawed
    • 1/2 cup chopped onion
    • 1/4 cup chopped green bell pepper (optional)
    • 1/4 cup sliced black olives (optional)
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • Fresh cilantro for garnish (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up into crumbles as it cooks. Drain any excess fat.
  3. Stir in the taco seasoning mix and a small amount of water as directed on the seasoning packet. Cook for 2-3 minutes until the seasoning is well incorporated. Remove from heat and set aside.
  4. In a large mixing bowl, combine the cream of chicken soup, sour cream, cheddar cheese, Monterey Jack cheese, chopped onion, and bell pepper (if using). Season with salt and pepper to taste. Add the thawed hashbrowns and toss to combine.
  5. Stir in the cooked ground beef mixture, mixing until everything is well coated.
  6. Pour the mixture into the prepared baking dish and spread it evenly. Top with sliced black olives (if using) and additional cheese if desired.
  7. Bake for 30-35 minutes, or until the casserole is bubbly and golden on top.
  8. Let it cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
