  • 20 jumbo pasta shells
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups queso dip (store-bought or homemade)
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (for garnish)
  • 1/2 cup sliced green onions (for garnish)

Directions:

  1. Preheat the oven to 350°F (175°C). Cook the jumbo pasta shells according to package instructions. Drain and set aside.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and cooked through. Drain any excess grease.
  3. Stir in the taco seasoning and salsa, cooking for an additional 2-3 minutes.
  4. Fill each cooked pasta shell with the seasoned beef mixture and arrange them in a greased baking dish.
  5. Pour the queso dip over the top of the stuffed shells, spreading evenly.
  6. Sprinkle the shredded cheddar cheese over the queso.
  7. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Serve with a dollop of sour cream and garnish with cilantro and green onions.
