- Flavorful Taco Cupcakes with All the Fixings
Ingredients:
- For the Cupcake Base:
- 1 pound ground beef or turkey
- 1 small onion, chopped
- 1 packet taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sour cream (for topping)
- For the Taco Cupcake Shells:
- 1 package refrigerated biscuit dough (8 biscuits)
- Cooking spray (for greasing)
- For Garnish:
- Sliced jalapeños (optional)
- Fresh cilantro (optional)
- Avocado slices (optional)
Directions:
- Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray.
- In a skillet over medium heat, cook the chopped onion until translucent. Add the ground beef or turkey, cooking until browned. Drain excess fat. Stir in the taco seasoning according to package instructions.
- Roll out each biscuit from the package and flatten it slightly. Press each biscuit into the greased muffin tin, creating a “cup” shape.
- Fill each biscuit cup with the taco meat mixture, then top with shredded cheddar cheese.
- Bake for 12-15 minutes, or until the biscuit cups are golden brown and the cheese is melted.
- Remove from the oven and let cool for a few minutes.
- Carefully remove the taco cupcakes from the muffin tin and place them on a serving platter.
- Top each taco cupcake with shredded lettuce, diced tomatoes, and a dollop of sour cream. Garnish with sliced jalapeños, fresh cilantro, or avocado slices if desired.
- Serve immediately and enjoy!
