Ingredients:

  • 1 1/2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 unbaked 9-inch pie crust
  • Whipped cream (optional, for serving)

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, condensed milk, eggs, melted butter, and vanilla. Mix until smooth.
  3. Add the cinnamon, nutmeg, ginger, and salt. Stir until well combined.
  4. Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.
  5. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the pie cool to room temperature before slicing. Serve with whipped cream if desired.
