These Heavenly Summer Peach Bars are the epitome of summer in every bite. The juicy, tender peaches are perfectly complemented by a buttery, flaky crust that adds the perfect crunch. The balance of sweetness and tartness from the fresh peaches makes these bars a refreshing treat, ideal for warm summer days.

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 large peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup brown sugar, packed
  • Powdered sugar for dusting (optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line with parchment paper.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the softened butter, egg, and vanilla extract to the dry ingredients. Mix until the dough comes together (it will be thick).
  4. Press about two-thirds of the dough into the bottom of the prepared baking dish, forming a crust.
  5. In a separate bowl, combine the sliced peaches, lemon juice, cornstarch, and brown sugar. Toss to coat the peaches evenly.
  6. Spread the peach mixture over the dough crust.
  7. Crumble the remaining dough over the peaches to create a topping.
  8. Bake for 40-45 minutes, or until the bars are golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan before slicing. Dust with powdered sugar before serving, if desired.
