Sweet and Spicy Honey Pepper Chicken

  1. Ingredients:
    • 4 boneless, skinless chicken thighs
    • 1/4 cup honey
    • 2 tablespoons soy sauce
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon olive oil
    • 1 teaspoon red pepper flakes (adjust to taste)
    • 1/2 teaspoon black pepper
    • 2 cloves garlic, minced
    • Salt to taste
    • Chopped green onions, for garnish
    Directions:
    1. In a bowl, whisk together honey, soy sauce, apple cider vinegar, olive oil, red pepper flakes, black pepper, minced garlic, and salt until well combined.
    2. Add the chicken thighs to the marinade and let them sit for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
    3. Preheat the grill or a skillet over medium heat.
    4. Remove the chicken from the marinade, reserving the marinade for later.
    5. Cook the chicken for 6-8 minutes on each side, or until cooked through and golden brown.
    6. Meanwhile, bring the reserved marinade to a boil in a small saucepan and simmer for 3-5 minutes until slightly thickened.
    7. Drizzle the thickened marinade over the chicken before serving and garnish with chopped green onions.
