Ingredients:
- 1 lb (450g) boneless, skinless chicken thighs
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon vegetable oil
- 2 teaspoons garlic, minced
- 1 teaspoon ginger, minced
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon sesame seeds (for garnish)
- 2 green onions, chopped (for garnish)
Directions:
- In a mixing bowl, whisk together honey, soy sauce, rice vinegar, vegetable oil, garlic, ginger, crushed red pepper flakes, black pepper, and salt until well combined.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
- Preheat your grill or skillet over medium-high heat.
- Remove the chicken from the marinade and reserve the marinade for later.
- Grill the chicken for about 5-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (74°C).
- In a small saucepan, bring the reserved marinade to a boil over medium heat. Cook for 2-3 minutes until it thickens slightly.
- Brush the cooked chicken with the thickened marinade and cook for an additional minute on each side.
- Remove from heat and let it rest for a few minutes. Slice the chicken and serve, garnished with sesame seeds and chopped green onions.
