Ingredients:

  • 1 lb (450g) boneless, skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon vegetable oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Directions:

  1. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, vegetable oil, garlic, ginger, crushed red pepper flakes, black pepper, and salt until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  3. Preheat your grill or skillet over medium-high heat.
  4. Remove the chicken from the marinade and reserve the marinade for later.
  5. Grill the chicken for about 5-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (74°C).
  6. In a small saucepan, bring the reserved marinade to a boil over medium heat. Cook for 2-3 minutes until it thickens slightly.
  7. Brush the cooked chicken with the thickened marinade and cook for an additional minute on each side.
  8. Remove from heat and let it rest for a few minutes. Slice the chicken and serve, garnished with sesame seeds and chopped green onions.
