Sweet and Savory Bourbon Chicken with Roasted Broccoli

This Bourbon Chicken with Broccoli combines the perfect balance of sweet, savory, and slightly spicy flavors. The tender chicken is coated in a rich bourbon sauce with a touch of ginger and soy sauce, creating a mouthwatering dish. Paired with roasted broccoli that’s crispy on the edges and tender on the inside, it’s a wholesome and satisfying meal.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic, minced
  • 1/2 cup bourbon (or use apple cider for a non-alcoholic version)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 cups broccoli florets
  • 1 tablespoon olive oil (for roasting the broccoli)
  • Salt and pepper to taste
  • 1 tablespoon green onions, chopped (optional, for garnish)

Directions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on the prepared baking sheet and roast in the preheated oven for 15-20 minutes, or until the broccoli is tender and slightly crispy on the edges.
  3. While the broccoli is roasting, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 6-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.
  5. Pour in the bourbon, soy sauce, brown sugar, rice vinegar, ground ginger, and red pepper flakes (if using). Stir to combine and bring the sauce to a simmer. Let it cook for 4-5 minutes, or until the sauce has thickened slightly.
  6. Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to allow the chicken to soak up the flavors.
  7. Once the broccoli is done roasting, serve the bourbon chicken over the roasted broccoli. Garnish with chopped green onions, if desired.
