This Bourbon Chicken with Broccoli combines the perfect balance of sweet, savory, and slightly spicy flavors. The tender chicken is coated in a rich bourbon sauce with a touch of ginger and soy sauce, creating a mouthwatering dish. Paired with roasted broccoli that’s crispy on the edges and tender on the inside, it’s a wholesome and satisfying meal.
Ingredients:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 tablespoon garlic, minced
- 1/2 cup bourbon (or use apple cider for a non-alcoholic version)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 2 cups broccoli florets
- 1 tablespoon olive oil (for roasting the broccoli)
- Salt and pepper to taste
- 1 tablespoon green onions, chopped (optional, for garnish)
Directions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on the prepared baking sheet and roast in the preheated oven for 15-20 minutes, or until the broccoli is tender and slightly crispy on the edges.
- While the broccoli is roasting, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 6-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Pour in the bourbon, soy sauce, brown sugar, rice vinegar, ground ginger, and red pepper flakes (if using). Stir to combine and bring the sauce to a simmer. Let it cook for 4-5 minutes, or until the sauce has thickened slightly.
- Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to allow the chicken to soak up the flavors.
- Once the broccoli is done roasting, serve the bourbon chicken over the roasted broccoli. Garnish with chopped green onions, if desired.
