These Spinach Stuffed Pastries are the perfect balance of crispy, flaky pastry and a creamy, savory spinach filling. With rich ricotta and feta cheeses, every bite is a comforting mix of flavors and textures. The golden crust adds a satisfying crunch, while the spinach filling offers a nutritious and flavorful bite.
- Ingredients:
- 1 sheet puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup feta cheese, crumbled
- 1 egg (for egg wash)
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon fresh lemon juice (optional)
- Fresh herbs for garnish (optional)
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Heat olive oil in a large pan over medium heat. Add the chopped spinach and cook for 2-3 minutes until wilted and reduced in volume. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, feta cheese, garlic powder, salt, pepper, and lemon juice (if using). Stir until well combined.
- Unroll the puff pastry on a floured surface. Cut it into 4 equal squares or rectangles, depending on your preference.
- Spoon a generous amount of the spinach mixture onto the center of each pastry square. Fold the edges over to form a triangle or rectangle, sealing the edges by pressing them together with a fork.
- Beat the egg and brush it over the top of each pastry for a golden, glossy finish.
- Place the stuffed pastries onto the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.
- Let the pastries cool slightly before serving. Garnish with fresh herbs if desired.
