Spiced Pumpkin Bread

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tbsp sugar (for topping, optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Add the pumpkin puree, milk, and vanilla extract, and mix until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. If desired, fold in the chopped walnuts or pecans.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle with a tablespoon of sugar on top if you like a sweet, crunchy finish.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the pumpkin bread cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely before slicing.
