Southern Chocolate Cobbler

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup brown sugar, packed
  • 1 1/2 cups boiling water
  • Vanilla ice cream (for serving, optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, and salt. Mix well.
  3. Stir in the milk, melted butter, and vanilla extract until just combined. Pour the batter into the prepared baking dish.
  4. In a separate bowl, mix the brown sugar and boiling water until combined. Carefully pour this mixture over the batter in the baking dish. Do not stir.
  5. Bake for 30-35 minutes, or until the top is set and the center is gooey.
  6. Allow to cool slightly before serving warm with a scoop of vanilla ice cream.
