Raspberry Cream Cheese Bites are the perfect combination of creamy, tangy cream cheese and sweet, juicy raspberries wrapped in a flaky, golden puff pastry. These bite-sized treats offer the ideal balance of sweetness and tartness, with a light and airy texture that melts in your mouth. - Ingredients:
- 1 sheet puff pastry (store-bought or homemade)
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries (or frozen, thawed)
- 1 tablespoon lemon zest
- 1 tablespoon honey (optional, for drizzling)
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
Directions:
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the puff pastry: Roll out the puff pastry sheet on a lightly floured surface. Cut it into small squares (about 3-inch squares).
- Make the cream cheese filling: In a medium bowl, whisk together the softened cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and well combined.
- Assemble the bites: Place a teaspoon of the cream cheese mixture in the center of each puff pastry square. Top with a couple of fresh raspberries.
- Seal the bites: Fold the edges of the puff pastry squares over the filling to form a pocket, pinching the corners to seal. Place each bite seam-side down on the prepared baking sheet.
- Egg wash: In a small bowl, whisk the egg and water together to make an egg wash. Brush the top of each pastry with the egg wash to give it a golden color when baked.
- Bake the bites: Bake for 15-20 minutes, or until the puff pastry is golden and flaky.
- Serve: Allow the bites to cool slightly, then drizzle with honey (optional) and serve. Enjoy warm or at room temperature.
