Soft and Chewy Healthy Oatmeal Cookies

These Healthy Oatmeal Cookies offer the perfect balance of sweet and wholesome, with the chewiness of oats and a touch of cinnamon spice. Made with simple, nourishing ingredients like whole wheat flour, coconut oil, and honey, they are a guilt-free treat that’s full of flavor.

  1. Ingredients:
    • 1 cup rolled oats
    • 1/2 cup whole wheat flour
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 1/4 cup coconut oil, melted
    • 1/4 cup honey or maple syrup
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/3 cup raisins or dark chocolate chips (optional)
    • 1/4 cup chopped nuts (optional, such as walnuts or almonds)
    Directions:
    1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
    2. In a medium bowl, combine the oats, whole wheat flour, baking soda, cinnamon, and salt.
    3. In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until well combined.
    4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the raisins (or chocolate chips) and chopped nuts.
    5. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
    6. Flatten the dough slightly with the back of a spoon or your fingers.
    7. Bake for 8-10 minutes, or until the edges are lightly golden. The cookies will firm up as they cool.
    8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
