Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 6 strips bacon, chopped
  • 1 cup mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup Parmesan cheese (for topping)

Directions:

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
  2. In the same skillet, cook the chopped bacon until crispy. Transfer the bacon to a paper towel-lined plate, leaving a bit of the bacon grease in the pan.
  3. Add the mushrooms to the skillet and sauté for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  4. Toss in the fresh spinach and cook until wilted. Stir in the heavy cream and bring to a gentle simmer.
  5. Add mozzarella cheese and stir until melted into a creamy sauce. Season with salt, pepper, and red pepper flakes if desired.
  6. Return the chicken breasts to the skillet, spooning the creamed spinach and mushrooms over the top.
  7. Sprinkle Parmesan cheese on top and simmer for 2-3 minutes to meld the flavors.
  8. Serve warm with crispy bacon bits sprinkled over each chicken breast.
