Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 6 strips bacon, chopped
- 1 cup mushrooms, sliced
- 2 garlic cloves, minced
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup Parmesan cheese (for topping)
Directions:
- Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, cook the chopped bacon until crispy. Transfer the bacon to a paper towel-lined plate, leaving a bit of the bacon grease in the pan.
- Add the mushrooms to the skillet and sauté for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
- Toss in the fresh spinach and cook until wilted. Stir in the heavy cream and bring to a gentle simmer.
- Add mozzarella cheese and stir until melted into a creamy sauce. Season with salt, pepper, and red pepper flakes if desired.
- Return the chicken breasts to the skillet, spooning the creamed spinach and mushrooms over the top.
- Sprinkle Parmesan cheese on top and simmer for 2-3 minutes to meld the flavors.
- Serve warm with crispy bacon bits sprinkled over each chicken breast.
