- Ingredients:
- 4 cups fresh strawberries, hulled and mashed
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract (optional)
- 1 packet (1.75 oz) fruit pectin (like Sure-Jell)
Directions:
- In a large mixing bowl, mash the strawberries with a potato masher or fork until you have a smooth consistency with a few small chunks remaining. Set aside.
- In a large pot, combine the mashed strawberries, sugar, and lemon juice. Stir over medium heat until the sugar is dissolved and the mixture begins to boil.
- Once the mixture starts boiling, stir in the fruit pectin and continue to boil for about 5-10 minutes, stirring frequently. The jam should thicken up.
