Smoked Shotgun Shells

Ingredients:

  • 12 manicotti shells
  • 1 pound ground beef or sausage
  • 1 cup cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup barbecue sauce (for basting)
  • Optional: chopped green onions for garnish

Directions:

  1. Preheat your smoker to 225°F (107°C).
  2. In a skillet over medium heat, cook the ground beef or sausage until fully cooked. Drain excess fat and let it cool slightly.
  3. In a mixing bowl, combine the cooked meat, cream cheese, mozzarella, cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  4. Carefully stuff each manicotti shell with the meat and cheese mixture using a spoon or piping bag.
  5. Place the stuffed shells on a baking sheet and brush them generously with barbecue sauce.
  6. Transfer the baking sheet to the smoker and smoke for about 1 hour, or until the shells are heated through and the cheese is bubbly.
  7. Remove from the smoker and let cool for a few minutes before serving. Garnish with chopped green onions if desired.
