Slow Cooker Pineapple Barbecue Meatballs

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup barbecue sauce
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce

Directions:

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, green onions, egg, garlic, salt, and pepper. Mix until well combined.
  2. Form the mixture into 1-inch meatballs and place them in the bottom of the slow cooker.
  3. In a separate bowl, whisk together the barbecue sauce, soy sauce, Worcestershire sauce, and pineapple chunks.
  4. Pour the sauce over the meatballs, making sure they are evenly coated.
  5. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the meatballs are cooked through.
  6. Serve warm, either on their own or with toothpicks as an appetizer.
