Slow Cooker French Onion Meatballs

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tablespoon dried parsley
  • 2 cloves garlic, minced
  • 1 packet French onion soup mix
  • 2 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, parsley, garlic, salt, and pepper. Mix until well combined, then form into 1-inch meatballs.
  2. In a skillet, melt butter over medium heat and sauté the sliced onion until softened and caramelized, about 10 minutes.
  3. Place the meatballs in the slow cooker and top with the caramelized onions.
  4. Pour in the beef broth and sprinkle the French onion soup mix over the top.
  5. Cook on low for 4-5 hours.
  6. Before serving, sprinkle mozzarella cheese over the meatballs and let it melt for an additional 5-10 minutes. Serve hot.
