Ingredients:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tablespoon dried parsley
- 2 cloves garlic, minced
- 1 packet French onion soup mix
- 2 cups beef broth
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Directions:
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, parsley, garlic, salt, and pepper. Mix until well combined, then form into 1-inch meatballs.
- In a skillet, melt butter over medium heat and sauté the sliced onion until softened and caramelized, about 10 minutes.
- Place the meatballs in the slow cooker and top with the caramelized onions.
- Pour in the beef broth and sprinkle the French onion soup mix over the top.
- Cook on low for 4-5 hours.
- Before serving, sprinkle mozzarella cheese over the meatballs and let it melt for an additional 5-10 minutes. Serve hot.
