Ingredients:

  • 2 racks of beef ribs (about 3 lbs)
  • 1 cup barbecue sauce (your favorite brand or homemade)
  • 1 tablespoon brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for spice)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder
  • Salt to taste

Directions:

  1. Start by removing the silver skin from the back of the ribs. This thin membrane can be tough and chewy, so peeling it off will make the ribs more tender.
  2. Mix the dry seasonings: paprika, brown sugar, garlic powder, onion powder, black pepper, cayenne pepper (optional), mustard powder, and salt in a small bowl.
  3. Rub the seasoning mixture generously all over the beef ribs, making sure to cover every surface.
  4. Place the seasoned ribs in the slow cooker. Pour the barbecue sauce and apple cider vinegar over the ribs, making sure they are well-coated.
  5. Cover and cook on low for 6-7 hours, or until the meat is tender and easily pulls away from the bone.
  6. Once done, carefully remove the ribs from the slow cooker. If you prefer a caramelized, slightly crispy finish, transfer the ribs to a preheated oven at 400°F (200°C) for 10-15 minutes, basting with additional barbecue sauce halfway through.
  7. Slice the ribs between the bones and serve with extra barbecue sauce on the side.
