This Crock-Pot Cinnamon Roll Casserole is the perfect way to enjoy a warm, sweet breakfast or brunch with minimal effort. The gooey cinnamon rolls are transformed into a rich, comforting casserole, where every bite is bursting with cinnamon flavor and a creamy texture. The brown sugar and butter create a sweet, caramelized topping, while the drizzle of icing adds the finishing touch.

  1. Ingredients:
    • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
    • 4 large eggs
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/2 cup brown sugar, packed
    • 1 tablespoon unsalted butter, melted
    • 1/2 cup chopped pecans or walnuts (optional)
    • Icing from the cinnamon rolls (for drizzling)
    Directions:
    1. Lightly grease the inside of a Crock-Pot (slow cooker) with cooking spray or butter.
    2. Cut the cinnamon rolls into quarters and spread them evenly in the bottom of the Crock-Pot.
    3. In a medium bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, ground nutmeg, and brown sugar until well combined.
    4. Pour the egg mixture evenly over the cinnamon rolls in the Crock-Pot, ensuring they are well coated.
    5. Drizzle the melted butter over the top and, if using, sprinkle the chopped nuts on top for added crunch.
    6. Cover and cook on low for 2 to 3 hours, or until the casserole is set and the cinnamon rolls are cooked through. (Cooking times may vary depending on your Crock-Pot.)
    7. Once done, turn off the Crock-Pot and drizzle the icing from the cinnamon roll cans over the top while still warm.
    8. Serve immediately and enjoy a warm, gooey, cinnamon-sweet breakfast!
