Ingredients:
- 1 lb flank steak
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 small flour tortillas
- Fresh cilantro for garnish (optional)
- Sour cream, guacamole, and salsa for serving (optional)
Directions:
- In a small bowl, mix together lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Rub the seasoning mixture all over the flank steak.
- Heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil.
- Cook the steak for about 5-7 minutes per side, or until it reaches your desired level of doneness. Remove from the pan and let it rest for 5 minutes before slicing.
- In the same skillet, add a little more oil if needed, and sauté the onions and peppers until tender and slightly charred, about 5-7 minutes. Add garlic during the last minute of cooking.
- Slice the steak against the grain into thin strips.
- Serve the sliced steak and sautéed vegetables on warm tortillas. Garnish with fresh cilantro and serve with sour cream, guacamole, and salsa, if desired.
