  1. Sizzling Steak Fajitas with Peppers and Onions

Ingredients:

  • 1 lb flank steak
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Fresh cilantro for garnish (optional)
  • Sour cream, guacamole, and salsa for serving (optional)

Directions:

  1. In a small bowl, mix together lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Rub the seasoning mixture all over the flank steak.
  2. Heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil.
  3. Cook the steak for about 5-7 minutes per side, or until it reaches your desired level of doneness. Remove from the pan and let it rest for 5 minutes before slicing.
  4. In the same skillet, add a little more oil if needed, and sauté the onions and peppers until tender and slightly charred, about 5-7 minutes. Add garlic during the last minute of cooking.
  5. Slice the steak against the grain into thin strips.
  6. Serve the sliced steak and sautéed vegetables on warm tortillas. Garnish with fresh cilantro and serve with sour cream, guacamole, and salsa, if desired.
