Shrimp and Spinach Alfredo

This Shrimp and Spinach Alfredo is a comforting and creamy dish that’s perfect for any occasion. The tender shrimp, fresh spinach, and rich Alfredo sauce come together to create a luxurious, flavorful pasta that’s both satisfying and indulgent.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Directions:

  1. Cook the fettuccine pasta according to the package instructions. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
  4. Add the spinach to the skillet and cook for 2-3 minutes, until wilted.
  5. Reduce the heat to medium and pour in the heavy cream. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Cook for 3-4 minutes, allowing the sauce to thicken slightly.
  6. Return the shrimp to the skillet and toss to coat in the sauce.
  7. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated in the Alfredo sauce.
  8. Garnish with fresh parsley and serve immediately.
