Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 oz fettuccine pasta
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish (optional)
Directions:
- Cook the fettuccine pasta according to the package instructions. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
- Add the spinach to the skillet and cook for 2-3 minutes, until wilted.
- Reduce the heat to medium and pour in the heavy cream. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Cook for 3-4 minutes, allowing the sauce to thicken slightly.
- Return the shrimp to the skillet and toss to coat in the sauce.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated in the Alfredo sauce.
- Garnish with fresh parsley and serve immediately.
