Sensational Strawberry Cheesecake Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Directions:

  1. Prepare the Cookie Dough: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  2. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the crushed freeze-dried strawberries.
  3. Make the Cream Cheese Filling: In a small bowl, mix the cream cheese and powdered sugar until smooth.
  4. Assemble the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch balls. Flatten each ball slightly, add a small spoonful of cream cheese mixture to the center, and gently seal the dough around the filling.
  5. Place the cookies on the baking sheet about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
