Directions:

- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the crushed freeze-dried strawberries.
- Make the Cream Cheese Filling: In a small bowl, mix the cream cheese and powdered sugar until smooth.
- Assemble the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch balls. Flatten each ball slightly, add a small spoonful of cream cheese mixture to the center, and gently seal the dough around the filling.
- Place the cookies on the baking sheet about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
