The earthy mushrooms and fragrant garlic create a mouthwatering base, while the Swiss cheese adds a delightful creamy finish. Each bite is a comforting experience that will warm you up from the inside out.

Ingredients:

  • 4 bone-in pork chops
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (preferably cremini or white)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup Swiss cheese, shredded
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them in the skillet for 3-4 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside.
  2. In the same skillet, add butter, onion, and garlic. Cook for 2-3 minutes until the onions are softened and the garlic is fragrant.
  3. Add the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and thyme, then return the pork chops to the skillet. Reduce the heat to low, cover, and simmer for 8-10 minutes, or until the pork chops are cooked through and tender.
  6. Once the pork chops are cooked, sprinkle the shredded Swiss cheese over the top of the chops and cover the skillet again. Let it sit for 1-2 minutes until the cheese has melted.
  7. Garnish with fresh parsley and serve immediately.
