Savory Huli Huli Chicken with Pineapple Glaze

Huli Huli Chicken offers a perfect balance of sweet and savory flavors, with a luscious pineapple glaze that beautifully caramelizes on the grill. The combination of soy sauce, brown sugar, and tangy pineapple juice brings a tropical vibe to your plate, making each bite a flavorful escape.

  • Ingredients:

For the Chicken Marinade:

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

For the Pineapple Glaze:

  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon grated fresh ginger

For Garnish:

  • Sliced green onions
  • Toasted sesame seeds
  • Fresh pineapple wedges (optional)

Directions:

  1. In a large bowl, combine all the marinade ingredients. Add the chicken and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably overnight, to allow the chicken to marinate.
  2. While the chicken is marinating, prepare the pineapple glaze. In a small saucepan, combine the pineapple juice, soy sauce, brown sugar, rice vinegar, sesame oil, and grated ginger. Bring to a simmer over medium heat.
  3. Stir the cornstarch mixture into the glaze and continue to cook for 2-3 minutes, or until the glaze thickens. Remove from heat and set aside to cool slightly.
  4. Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C), brushing with the pineapple glaze during the last few minutes of grilling.
  6. Once cooked, remove the chicken from the grill and allow it to rest for a few minutes.
  7. Slice the chicken and drizzle with the remaining pineapple glaze. Garnish with sliced green onions, toasted sesame seeds, and fresh pineapple wedges, if desired.
  8. Serve the Huli Huli Chicken with steamed rice or a refreshing salad.
