- Ingredients:
For the Chicken Marinade:
- 4 boneless, skinless chicken breasts or thighs
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
For the Pineapple Glaze:
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
- 1 tablespoon sesame oil
- 1/2 teaspoon grated fresh ginger
For Garnish:
- Sliced green onions
- Toasted sesame seeds
- Fresh pineapple wedges (optional)
Directions:
- In a large bowl, combine all the marinade ingredients. Add the chicken and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably overnight, to allow the chicken to marinate.
- While the chicken is marinating, prepare the pineapple glaze. In a small saucepan, combine the pineapple juice, soy sauce, brown sugar, rice vinegar, sesame oil, and grated ginger. Bring to a simmer over medium heat.
- Stir the cornstarch mixture into the glaze and continue to cook for 2-3 minutes, or until the glaze thickens. Remove from heat and set aside to cool slightly.
- Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C), brushing with the pineapple glaze during the last few minutes of grilling.
- Once cooked, remove the chicken from the grill and allow it to rest for a few minutes.
