Ingredients:
- 1 lb ground beef
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 1 package (8 oz) cream cheese, softened
- 1 tablespoon taco seasoning
- 1 can (8 oz) crescent roll dough
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped (optional)
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Add the taco seasoning, Rotel tomatoes, and a pinch of salt and pepper to the skillet. Stir to combine and cook for 2-3 minutes until heated through. Remove from heat.
- Stir in the cream cheese until it’s fully melted and incorporated into the beef mixture. Remove from heat and set aside.
- Unroll the crescent dough on a flat surface. Separate the dough into triangles as directed on the package.
- Spoon about 1-2 tablespoons of the beef and cream cheese mixture onto each crescent triangle. Roll up each triangle starting at the wide end, rolling it tightly into a crescent shape.
- Place the crescent rolls on the prepared baking sheet and bake for 10-12 minutes, or until golden brown and puffed.
- Once baked, remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven for an additional 2-3 minutes to melt the cheese.
- Garnish with chopped green onions if desired and serve warm.
