- Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 1 bell pepper, chopped (any color)
- 4 large eggs
- 1/4 cup milk
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 4 large tortillas (flour or whole wheat)
- 1 cup shredded cheese (cheddar or your favorite)
- Fresh cilantro or parsley, chopped (for garnish)
Directions:
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes, until the vegetables are softened.
- In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika.
- Pour the egg mixture into the skillet with the beef and vegetables. Cook, stirring gently, until the eggs are fully cooked and scrambled, about 3-5 minutes.
- Remove from heat and stir in the shredded cheese until melted.
- To assemble the wraps, spoon a generous portion of the beef scramble onto each tortilla. Roll up tightly and secure with a toothpick if desired.
- Serve warm, garnished with fresh cilantro or parsley.
