Sausage French Toast Roll-Ups

Ingredients:

  • 8 slices of white bread, crusts removed
  • 8 cooked breakfast sausages
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp butter (for cooking)
  • Maple syrup or powdered sugar, for serving

Directions:

  1. Use a rolling pin to flatten each slice of bread.
  2. Place one sausage at the edge of each slice of bread and roll tightly.
  3. In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon until well blended.
  4. Heat a skillet over medium heat and add a small amount of butter.
  5. Dip each roll-up in the egg mixture, coating all sides, and place in the skillet.
  6. Cook the roll-ups for about 2-3 minutes on each side, until golden brown and crispy.
  7. Serve warm with maple syrup or a dusting of powdered sugar.
