This Apple & Cranberry Roasted Chicken is an inviting dish that brings all the warm flavors of fall to the table. The combination of sweet apples, tangy cranberries, and savory herbs creates a beautifully balanced meal with tender, juicy chicken at the center. Each bite is infused with the fragrant blend of rosemary, thyme, and cinnamon, making it an irresistible treat for cool-weather evenings.
Ingredients:
- Chicken and Marinade
- 1 whole chicken (about 4-5 lbs)
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- Fruit and Flavorings
- 2 large apples, cored and sliced
- 1 cup fresh cranberries (or 1/2 cup dried cranberries)
- 1/4 cup honey
- 1/4 cup chicken broth
- 2 tbsp butter, melted
- 1/2 tsp cinnamon
Directions:
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix olive oil, rosemary, thyme, salt, and pepper. Rub this mixture all over the chicken, including under the skin where possible, for added flavor.
- In a baking dish, arrange sliced apples and cranberries as a base layer. Place the seasoned chicken on top.
- In another bowl, combine honey, chicken broth, melted butter, and cinnamon. Pour this mixture over the chicken and fruit.
- Roast the chicken in the oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown. Baste the chicken with pan juices every 20-30 minutes for extra flavor and moisture.
- Let the chicken rest for 10 minutes before carving. Serve with roasted apples and cranberries for a complete meal.
