This Apple & Cranberry Roasted Chicken brings together the rich flavors of roasted chicken with the tartness of cranberries and the sweetness of apples, making it a perfect dish for any special occasion. The roasted fruit adds a depth of flavor, while the herb-infused chicken stays juicy and tender, with crispy, golden skin.
- Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 apples, cored and sliced into wedges
- 1 cup fresh cranberries (or 1/2 cup dried cranberries)
- 1 onion, quartered
- 3 garlic cloves, smashed
- 1/2 cup chicken broth
- 1 tablespoon honey (optional, for extra sweetness)
- Fresh rosemary and thyme sprigs, for garnish
Directions:
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels, then rub the olive oil all over the skin. Season the chicken generously with salt, pepper, thyme, and rosemary.
- In a large roasting pan, arrange the apple wedges, cranberries, onion, and garlic around the chicken.
- Pour the chicken broth into the bottom of the pan and drizzle the honey (if using) over the chicken and fruit.
- Roast the chicken for about 1.5 hours, or until the internal temperature reaches 165°F (75°C) when tested with a meat thermometer. Baste the chicken halfway through with the pan juices for a golden, crispy skin.
- Once roasted, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Garnish with fresh rosemary and thyme sprigs, and serve the chicken with the roasted apples and cranberries from the pan.
