  1. Ingredients:
  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 apples, cored and sliced into wedges
  • 1 cup fresh cranberries (or 1/2 cup dried cranberries)
  • 1 onion, quartered
  • 3 garlic cloves, smashed
  • 1/2 cup chicken broth
  • 1 tablespoon honey (optional, for extra sweetness)
  • Fresh rosemary and thyme sprigs, for garnish

Directions:
