- Ricotta Cookies with a Zesty Orange Twist
Ingredients:
- For the Cookies:
- 1 cup ricotta cheese
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons orange zest (from about 1 orange)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh orange juice
- 1 teaspoon orange zest (for garnish)
Directions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the ricotta cheese, softened butter, and granulated sugar until smooth and fluffy.
- Add the eggs, vanilla extract, and orange zest to the mixture, stirring until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-18 minutes or until the edges are lightly golden. The cookies will appear soft in the center. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and fresh orange juice until smooth. Drizzle the glaze over the cooled cookies and garnish with additional orange zest.
