Ingredients:

  • 1 large cucumber, peeled and sliced
  • 1 cup fresh lemon juice (about 4-6 lemons)
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Lemon slices and cucumber slices (for garnish)
  • Fresh mint leaves (optional, for garnish)

Directions:

  1. In a blender, combine the sliced cucumber and 1 cup of cold water. Blend until smooth. Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher to remove the pulp, pressing down to extract as much liquid as possible.
  2. Add the fresh lemon juice and granulated sugar to the cucumber juice in the pitcher. Stir well until the sugar is fully dissolved.
  3. Pour in the remaining 3 cups of cold water and stir to combine. Taste and adjust the sweetness by adding more sugar if desired.
  4. Chill the cucumber lemonade in the refrigerator for at least 30 minutes before serving.
  5. Serve over ice in glasses, garnished with lemon slices, cucumber slices, and fresh mint leaves if using.
