- Refreshing Cucumber Lemonade
Ingredients:
- 1 large cucumber, peeled and sliced
- 1 cup fresh lemon juice (about 4-6 lemons)
- 1/2 cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice cubes
- Lemon slices and cucumber slices (for garnish)
- Fresh mint leaves (optional, for garnish)
Directions:
- In a blender, combine the sliced cucumber and 1 cup of cold water. Blend until smooth. Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher to remove the pulp, pressing down to extract as much liquid as possible.
- Add the fresh lemon juice and granulated sugar to the cucumber juice in the pitcher. Stir well until the sugar is fully dissolved.
- Pour in the remaining 3 cups of cold water and stir to combine. Taste and adjust the sweetness by adding more sugar if desired.
- Chill the cucumber lemonade in the refrigerator for at least 30 minutes before serving.
- Serve over ice in glasses, garnished with lemon slices, cucumber slices, and fresh mint leaves if using.
