Directions:
- In a medium bowl, combine the mixed berries, sugar, and lemon juice. Toss gently and let sit for about 15 minutes to macerate.
- In another bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Dip each ladyfinger quickly into the cooled espresso, being careful not to soak them.
- In a trifle dish or individual glasses, start layering: place a layer of dipped ladyfingers at the bottom, followed by a layer of mascarpone mixture, then a layer of macerated berries. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone.
- Dust the top with cocoa powder. Cover and refrigerate for at least 4 hours or overnight to let the flavors meld.
- Serve chilled, garnished with additional berries if desired.
