Ingredients:

  • For the Dough:
    • 3 1/2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 1 packet (2 1/4 teaspoons) instant yeast
    • 1/2 teaspoon salt
    • 1 teaspoon cocoa powder
    • 1 cup whole milk, warmed
    • 1/4 cup unsalted butter, melted
    • 1 large egg
    • 2 tablespoons red food coloring
  • For the Filling:
    • 1/2 cup unsalted butter, softened
    • 1 cup brown sugar, packed
    • 2 tablespoons ground cinnamon
    • 1/2 cup chopped pecans or walnuts (optional)
  • For the Cream Cheese Icing:
    • 4 oz cream cheese, softened
    • 1/4 cup unsalted butter, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1-2 tablespoons milk (to adjust consistency)

Directions:

  1. In a large mixing bowl, combine 2 cups of flour, sugar, yeast, salt, and cocoa powder. In a separate bowl, whisk together the warmed milk, melted butter, egg, and red food coloring.
  2. Pour the wet ingredients into the dry ingredients and mix well. Gradually add the remaining flour until a soft dough forms. Knead for about 5-7 minutes until smooth.
  3. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Meanwhile, prepare the filling by mixing the softened butter, brown sugar, cinnamon, and nuts (if using) in a bowl until well combined.
  5. Roll out the risen dough on a floured surface into a rectangle (about 12×18 inches). Spread the filling evenly over the dough.
  6. Roll the dough tightly from the long side, then slice it into 12 equal pieces. Place the rolls in a greased 9×13-inch baking dish.
  7. Cover and let rise for an additional 30 minutes. Preheat the oven to 350°F (175°C).
  8. Bake the rolls for 25-30 minutes, or until golden brown.
  9. While the rolls are baking, prepare the cream cheese icing by beating the cream cheese and butter together until smooth. Gradually add powdered sugar, vanilla, and enough milk to achieve desired consistency.
  10. Drizzle the icing over the warm cinnamon rolls before serving.
