- Ingredients:
- 2 red snapper fillets
- 1 lb shrimp, peeled and deveined
- 1 cup grits (quick-cooking)
- 4 cups water or chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup green onions, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Lemon wedges (for serving)
Directions:
- In a saucepan, bring the water or chicken broth to a boil. Stir in the grits and reduce the heat to low. Cook according to package instructions, stirring occasionally, until creamy. Once cooked, stir in salt, pepper, and 1 tablespoon of butter. Set aside.
- In a large skillet over medium heat, melt the remaining butter. Add the garlic and sauté for 1-2 minutes until fragrant.
- Season the red snapper fillets and shrimp with Cajun seasoning. Place the red snapper in the skillet and cook for 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and keep warm.
- In the same skillet, add the shrimp and cook for about 2-3 minutes until they turn pink. Pour in the heavy cream and stir to combine. Let the sauce simmer for a few minutes until slightly thickened.
- To serve, spoon the creamy grits onto a plate, top with the Cajun cream sauce, shrimp, and red snapper. Garnish with sliced green onions and lemon wedges.
