Ingredients:
For the Meringues:
3 egg whites
1/4 teaspoon cream of tartar
A pinch of table salt
1 cup powdered sugar or powdered vanilla pink flossugar, divided
Drop of pink food gel (optional, if not using vanilla pink flossugar)
For the Cotton Candy Whipped Cream:
1 cup heavy cream or whipping cream
Remaining 1/4 cup powdered sugar or powdered vanilla pink flossugar
1/2 teaspoon cotton candy flavoring
Drop of pink food color (optional, if not using vanilla pink flossugar)
Instructions:
Preheat your oven to 200°F. Process 1 cup vanilla pink flossugar in a food processor until very fine, if not using pre-powdered sugar.
Make the Meringues: In a mixing bowl, beat egg whites until frothy.
Add cream of tartar and salt, beating until soft peaks form.
Gradually add sugar, beating until stiff peaks form.
Add pink food gel for color if desired.
Pipe onto a parchment-lined baking sheet and bake for 2 hours.
Prepare the Whipped Cream: In a chilled bowl, beat the cream, sugar, cotton candy flavoring, and food gel until firm peaks form.
Assemble the Meringues: Pipe or spoon whipped cream onto half of the meringues and sandwich with the remaining halves.
