Ingredients:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups mini marshmallows
  • 1 cup whipped cream (or Cool Whip)
  • ½ cup shredded coconut (optional)
  • ½ cup chopped pecans or walnuts (optional)

Directions:

  1. In a large bowl, combine the drained pineapple and vanilla pudding mix.
  2. Fold in the whipped cream until everything is well mixed and fluffy.
  3. Stir in the mini marshmallows, shredded coconut, and chopped nuts (if using).
  4. Cover and refrigerate for at least 1 hour to let the flavors blend together.
  5. Serve chilled and garnish with extra whipped cream or a cherry on top if desired.
