Pepper Steak in a Crock Pot

Ingredients:

  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1/4 cup soy sauce (low sodium)
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup beef broth
  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons water
  • Cooked white rice for serving

Directions:

  1. In a crock pot, place the sliced beef, bell peppers, onion, and minced garlic.
  2. In a small bowl, whisk together soy sauce, brown sugar, Worcestershire sauce, ginger, black pepper, red pepper flakes (if using), and beef broth. Pour the mixture over the beef and vegetables.
  3. Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
  4. In the last 30 minutes of cooking, mix cornstarch with water to create a slurry. Stir the slurry into the crock pot to thicken the sauce.
  5. Serve the pepper steak over cooked white rice, and enjoy!
