Ingredients:
- 1.5 lbs beef sirloin or flank steak, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 1/4 cup soy sauce (low sodium)
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup beef broth
- 2 tablespoons cornstarch (for thickening)
- 2 tablespoons water
- Cooked white rice for serving
Directions:
- In a crock pot, place the sliced beef, bell peppers, onion, and minced garlic.
- In a small bowl, whisk together soy sauce, brown sugar, Worcestershire sauce, ginger, black pepper, red pepper flakes (if using), and beef broth. Pour the mixture over the beef and vegetables.
- Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
- In the last 30 minutes of cooking, mix cornstarch with water to create a slurry. Stir the slurry into the crock pot to thicken the sauce.
- Serve the pepper steak over cooked white rice, and enjoy!
