Pecan Pie Cookies

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

For the Maple Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 2-3 tablespoons milk (adjust for desired consistency)

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped pecans.
  4. Form the Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
  5. Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the centers look set. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Make the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, and enough milk to achieve your desired glaze consistency. Drizzle the glaze over the cooled cookies.
